    That’s basically how I’ve seen it done too. I’m in NYC and a few of my staff are Haitian, for work stuff they always lighten it up and make it more “office friendly” without losing the soul of it. Smaller pasta is key and honestly more veggies makes people go back for seconds. Slow cooker is clutch for potlucks, keeps it warm and not messy which offices appreciate. Skipping the pepper is smart, you can always bring it on the side if someone asks.

    Agreed with Vlad. Sometimes the fancy places lose the authentic spice. Look for where the locals are line up at lunch time.
